FOC PIM PAM (meaning ‘quick and easy’ in Spanish) is inspired by the Spanish bodegas and celebrates the vibrant tapas and wine culture with fine, fun food and sensational drinks. Located in a laid-back nook of Orchard Road and already the go-to spot among diners for lunch, dinner and late-night libations with a Spanish flair.
There’s nothing quite like a Spanish tapas restaurant: its buzz is electric, its flavours an absolute delight, its drinks a tonic for the soul. It’s a place that pulls you in and makes you want to stay… forever. The ambiance of FOC PIM PAM evokes the irrepressible energy and style of a Spanish tapas bar.
Revitalized spatial features like the Tapas Bar, Main Dining Room, Private Dining Room, Bar and Alfresco Terrace redefine the interior for a more holistic dining affair, whilst presenting themselves as unique alcoves for any diner seeking a distinctive experience, opting for a quick meal on their own, feasting with the family or casual drinks with friends.
Look forward to a pared down, yet varied selection of casual tapas at the Tapas Bar and Terrace to a full and comprehensive menu at the Main Dining Room; and for special occasions and events in the Private Dining Room, a customized menu conceived by the culinary team.
For those who are looking for a more intimate experience, FOC PIM PAM offers an ample private dining room, snug away at the back of the restaurant. The private room draws inspiration from a wine cellar, evoking its rustic textures and intimate atmosphere. The walls are rough-finished plaster in sand colour, with vertical timber slats lining its overhead section. A bar ledge runs the entire length of a main wall, perfect for pre-prandial drinks, and a long high wooden table with chairs occupies the centre, making this an ideal venue for close gatherings and events.
Food, Wine & Drinks
You can start with an aperitif paired with Ibérico cuts and select bite-sized tapas at the Tapas Bar that features an extensive wine list of over 300 labels and growing, spanning across the Spanish regions with renowned varietals and some lesser known. It is, however, FOC PIM PAM’s widest collection of sherries in Southeast Asia that will steal the limelight. Unsurpassed in variety and quality, the sherries are available by the bottle and glass. The range is sourced from the most illustrious sherry bodegas including Gonzalez Byass and Lustau, as well as boutique Spanish sherry producers with exclusive and direct imports. Adventurers can travel the regions and take pleasure in a sherry flight of 4 or 8 Spanish sherries poured in tasting portions or try one of the sherry-based cocktails. The Tapas Bar allows guests to mingle and even jostle if they like, as if they are in an authentic standing tapas bar in Spain.
Try some traditional Tapas, with a modern touch, starting with a fresh Cherry Gazpacho with Olive oil ice cream, or a reinvented ‘Ensaladilla Rusa’ with an Asian Twist: Soft-Shell Crab ‘Ensaladilla’. Explore different culinary regions of Spain trying Pim Pam ‘Trinxat’, a comforting dish of mashed potatoes, cabbage, and pork belly topped with a deep-fried egg that is often eaten up in the Catalan mountains; FOC ‘Callos’: Beef Tripe Stew with Pig Trotters and Chorizo stemming from the central Madrid area; Barcelona’s famed Chicken ‘Canelón’ bathed in rich béchamel or already well-known and loved Octopus ‘Galician Style’ with Crushed Potatoes and sprinkled with Spanish ‘Pimentón’. Not to forget about the FOC all-time favourites, including ‘Croquetas’ in different fillings (ham, mushroom, crab, and spinach & pine nuts) or juicy Prawns ‘Al Ajillo’.
A Spanish meal wouldn’t be complete without a Paella. Indulge in the rich and soothing Ibérico Pork Secreto & ‘Ceps’ Paella, with tender pork slices and aromatic mushrooms or stick to FOC Classics: Mediterranean Squid Ink Paella with baby squid and prawns. Alternatively, or in addition to, you may sink your teeth into meaty mains, as Ibérico Pork Ribs or Suckling Pig served with a wide array of garnishes
Least but not least, some space should be saved for the famed Churros. The chewy-crunchy cinnamon sugar-coated churros may come with a side of dark chocolate sauce, in a classic version, or Caramel and ‘Crema Catalana’ foam. However, at FOC PIM PAM you may also try White Chocolate-coated Churros with candied raspberries. Sweet treats don’t finish there though. Lemon Mojito will clean your palate after a rich meal, with its lemon shaped rum sorbet, mint pesto and white rum jelly, while you prepare for ‘Pan con Chocolate’, inspired by Spanish childhood memories, with melting chocolate ganache, packed nicely in toasted brioche bread and topped with candied orange zest.
The famed Spanish penchant for lush, leisurely dining will work its spell, and the party will surely thereafter adjourn to the newly created alfresco terrace, housed in a ceiling-fanned veranda perched street-side along Orchard Road. Here you can enjoy post-meal drinks including wines, spirits, gin & tonic, and a variety of unique cocktails featuring all kinds of sherry wine served from the adjoining bar. You will be amazed by what sherry can do to a cocktail. There is whole new palette of flavours to discover.
Embracing the Spanish Gin & Tonic Culture, there is also a heady array of 17 gins paired with boutique tonic waters and garnishes, served Spanish style – a 60ml gentleman’s pour in a balloon glass for appreciation of its lingering aromas. There is a myriad of delicious Spanish fares, ranging from high-quality Spanish wines, olive oils, Ibérico cold cuts, and premium canned seafood popular in Spain, such as cockles and mussels.
